A Year in Review…2017

As cheesy as New Years may be with all the resolutions, new year new me, and trips down memory lane…I love it.

As I was telling my husband yesterday, who doesn’t share my New Years thoughts, it’s a chance to give yourself a *somewhat* fresh start. Yes, you have to go back to work and paying bills and general adulting, but it’s a chance to say I am going to do something differently. We don’t get these moments in life, so I take advantage of moments I can make a fresh start.

This is the same reason I have come to like Monday’s. It’s a time to look at last week, the good and the bad, and commit to a new week. Hopefully even better!

Last year I had the same resolution I had every year for awhile. Get healthy, be skinny for once! A month into 2017 I was crying on the couch because I had become an unmotivated, constantly tired, hating myself, miserable, and an extremely self conscious woman. This wasn’t part of my resolution at all.

After finally deciding that I needed to invest in myself and my health so much changed! I signed up for a Beachbody challenge pack, super skeptical and expecting to cancel within a month or two. Little did I know I would finally find my stride and become someone I only dreamed of.

After just two months of working out and eating better I lost 12 of the 30 pounds I gained after I got married. I found myself in a better mood, happy to go to work, motivated to become a better wife and teacher. All of this from just eating healthier and working out 30 minutes a day.

When I look at everything I accomplished this year, I’m amazed. I started this journey to be a healthier and happier me February 1st, and since then I lost 35 pounds, have baby biceps coming in, ran a 5k running 10 minute miles, have pants that are loose and I don’t have to squeeze into them, and I have helped a few other women start their journey! But most importantly I am happy, healthy, and wake up everyday excited, motivated, and full of love for others and myself.

I have realized that my resolutions to lose weight and be skinny were rediculous. I have lost the word skinny and replaced it with healthy. I like ice cream and tacos. I’m not giving up foods that make me smile and do the happy dance. Life is about balance. Yes, I want to continue to build muscle and tone up, but I know my body and I’m not going to push it to something it just isn’t.

This upocming year I am focusing on health and happiness again. I’m not putting a number on my resolutions.  I want to run more, build muscle, cook new recipes, and continue to be the best me and happy. Focus on challenging yourself to be better. Turn your resolutions and goals into positive statements that build you up.

Make 2018 a year for you! We always forget about ourselves, but if we’d aren’t in a good spot, how can we live our best life?

So here’s to 2018. Here’s to being happy & fit!

Taco Tuesday

If you scroll through my Pinterest “Yummy” board you will see many taco recipes. If you ask me what I want for dinner, chances are I will say tacos. If I could eat one thing for the rest of my life…you guessed it, tacos. Needless to say, but I love tacos!

In honor of Taco Tuesday and all the amazing possibilities that come with this day, tacos will be made tonight, and I will share with you some easy, healthy recipes.

Tacos can be a quick, healthy meal if you just look around. There are so many protein options and ways to get vegetables in there too! Give some of these recipes a try! I found this awesome list from Health.com that has 19 Healthy Taco Recipes.

Tonight I will be making these Adobo-Lime Chicken Tacos – I am using my Instant Pot to cook the chicken. It makes it so easy to cook and shred for this recipe!
I put my chicken breasts in the Instant Pot with 1 cup of water and 1 teaspoon of the adobo sauce. I set the Instant Pot on high pressure for 15 minutes. When the timer goes off, do a quick release. You can shred the chicken right in your Instant Pot using forks.

The recipe is simple and healthy! Use the broccoli slaw in the recipe, you could add tomatoes, lettuce, and avocado.

My Sunday

Some Sunday’s are my rest days from workouts. I never take a rest day from prepping and planning.

When I decided to live a healthier life, I didn’t realize how much work the food part would be. It’s not that it is hard, but it takes work to get used to it and to do it right. The result of all of this? A week of healthy meals and snacks that make you feel good, get you closer to your goals, and saves you money.

When you sit down and look at your week ahead, plan your meals, and then shop for it all, it takes the guess work out of lunches and dinners. It is important because you could be rocking those workouts, but your food choices could make it so you don’t see results. This has become easier and easier for me as I have done it week after week. You need to make a healthy lifestyle in order to really make an impact. This isn’t a diet for a month or two, its a lifestyle change that takes time. I find that if I don’t prep on Sunday, my whole week is off!

Here are some things I do on Sunday to help me get ready for the week:

  1. Cut and freeze bananas for my smoothies

  4. Get my snacks ready (apples for my morning snack, clementines for my snack during my commute home)

  5. Plan my dinners & workouts – I am using a Happy Planner. A row for my work events, personal events, & my fitness journey.

I adapted some recipes I saw for Chicken Enchilada Soup to add more vegetables. I have found myself struggling to get enough veggies in. Hope you enjoy! If you are using a crock pot, cook on high for 5 hours 🙂

My Workouts

I used to be one of those people who would go to the gym and stay for hours. I enjoyed working out, but I had no idea what I was doing. I would jump from a cardio machine to the weights and then back to cardio. When I was working with weights, I just kind of did whatever. No plan. I thought I was doing awesome. Hours at the gym, how could I not be in the best shape of my life?

I have always enjoyed working out, but I also enjoyed eating. So my workouts never really meant anything because I didn’t back it up with the proper nutrition. My mentality was that I worked out for two hours today, I can eat whatever! In my other posts I have written about my meal prepping, snacks and recipes I have used. Today I want to talk about my workouts.

How have I lost almost 35 pounds (one pound away from that mini-victory!) without going to the gym?

When I first signed up with Beachbody a coworker had given my the 21 Day Fix DVD to use. I thought I would just use these workouts, and I could youtube the rest. There is only so long you can do the same exercises without craving a new challenge. I quickly realized that I wanted more and I signed up for Beachbody On Demand.

What is Beachbody On Demand you ask? It is basically the Netflix of fitness. All of Beachbody’s workout programs are there, ready for you to press play! It can be used on your Roku, Apple TV, phone, laptop, or tablet. Literally anywhere.

If having hundreds of workouts that cover everything from heavy weight lifting, to dancing, to yoga right at your fingertips isn’t enough, you also get all the program materials too! That means workout calendars and meal plans. The guess work is gone. This was a no brainer for me. All of my past ways of just randomly working out was done. I knew the schedule of what I should be doing, and I had an eating guide to help me see results from all that hard work.

Most of the workouts are only 30 minutes. Remember how I said I spent hours in the gym? I can walk downstairs to my living room, turn on my TV, choose my workout, and in 30 minutes I am done. Are there longer workouts? Yes. Have I done double workouts? Yup. Is it totally up to you? You bet.

It seriously baffles my mind how easy it makes working out. There are days where I feel like I just need to rest, so I can easily turn on a yoga routine. There are days when I feel on top of the world and I press play twice. I was staying in a hotel room on a work trip, and I was able to download my workouts to my iPad and workout right there. We were visiting mu husband’s family in California, and I had my workouts right there with me. It seriously rocks.

There’s really no secret except hard work. In my groups people have fallen in love with a certain program and have just done that 30 day or 60 day program again and again. People have also been working their way through all of the programs. There is something for everyone, every fitness level, every age.
